One of my most requested recipes, this cassava cake is mega special. Included in the recipe are coconut strings (macapuno) and condensed milk.
Ingredients are:
- 2 packages of frozen grated cassava
- 2 cans of coconut milk
- 2 egg yolks! (yoke only) ha! ha! ha!
- 1 bottle of coconut string (macapuno)
- 1 can of condensed milk
- 1 teaspoon of vanilla extract
Procedure:
1. Defrost grated cassava
2. In a big mixing bowl, mix, using wooden spoon, grated cassava, coconut milk, egg yolk, coconut string, and 2/3 can of condensed milk. Mix until lumps of grated cassava disappear.
3. Grease your baking pan. Pour the mixture in a not too shallow baking pan (rectangular size) and add a teaspoon of vanilla extract.
4. Bake in a 350 degree oven for about an hour and a half (90 min). Check for consistency, by using toothpick inserted in the middle.
5. Spread the remaining 1/3 can of condensed milk and bake the cake for additional 10 minutes at 400 degrees.
